Autumn Vegetable Soup

Fall vegetables of Pumpkin and Squash. Turnips, rutabagas, Sweet potatoes, Cauliflower, Brussels sprouts, Acorn Squash, Broccoli, Brussels sprouts, Butternut Squash, Cabbage, Carrots, Cauliflower, Kale

Fall brings cool crisp days. There is nothing like a bowl of soup as we begin to feel the chill in the air.

A bowl of soup warms us. It warms your body. It warms your spirit. Eating soup is comforting to our hearts and souls. It reminds us of feeling cared for.

Now is the perfect time to make up a big pot of vegetable soup. And since it’s fall why not use some fresh autumn vegetables.

Do you have a favorite vegetable soup recipe?

I have one that I love that every fall and winter I make a huge pot.

Making a big pot of soup allows you to freeze it in serving sizes and you have something warm and wonderful to eat whenever you feel a chill or need something comforting to sooth you.

 Choose your favorite fall vegetables, make or by some broth of your choice, add them all together in a big pot on the stove, cook until the vegetables are soft, season with salt and pepper and enjoy.
