Big Red Juicy Tomatoes are what comes to mind when you say tomato but there are also yellow, green, orange and purple tomatoes. Can’t say I have seen a purple tomato, have you? They also grow in different shapes and have different flavors.

Tomatoes are considered a fruit because they are grown on a flowering plant and have seeds. However, they are most often prepared like a vegetable.

Tomatoes are a good source of fiber, vitamins C, K1, B9 as well as potassium. Health benefits include reducing your risk of heart disease and some cancers, and benefit the skin.

For me nothing tastes more like summer than some big red homegrown tomatoes!

Why is it that tomatoes grown in your garden or someone else’s garden is just so much better?

A summertime lunch treat for us as kids was a BLT with tomatoes right out of the garden (or from the farm stand).

I remember sitting and enjoy sliced tomatoes with a little salt with grandma. She would go out into the garden to find the ripest ones and we would savor each bite!

Now I take those tomatoes and make a light pasta sauce with some olive oil, and Italian spices to pour over some angel hair pasta. I have to admit it is my go to light easy meal to prepare.

Tomatoes are such a versatile food. From simple slices to salad, to sandwiches, to sauce. Tomatoes can be added to many different foods and recipes.
